TABASCO SAUCE is an extremely hot CHILI sauce, made commercially in the United States since 1868.

TAHINI is a Middle Eastern paste made of ground sesame seeds.

TAILED PEPPER = Cubebs (Spices).

TA KRAI (Thailand) = LEMON GRASS.

TAMARIND = Tamarindus indica. [we do not at present carry this].

Tamarindus indica = TAMARIND.

Tanacetum balsamita = ALECOST.

Tanacetum vulgare = TANSY.

TANSY = Tanacetum vulgare. Herb with a spicy but bitter taste. [we do not at present carry this].

TARÇIN (Turkish) = Cinnamon (Spices).

TARGONE (Italian) = TARRAGON.

TARRAGON = Artemisia dracunculus. Herb much used in French cooking. [we do not at present carry this].

THAI GINGER = Greater or Java Galingale (Spices).

THA-LEB (Arabic) = SALEP.

ÞERBETÇÝOTU (Turkish) = HOPS.

ÞEYTAN TERSÝ (Turkish) = Asafetida (Spices).

THYME = one of several related herbs, of which Garden Thyme (Thymus vulgaris) is the most commonly used.

THYME, MOTHER OF = WILD THYME.

THYME, WILD = Thymus serpyllum.

TIBAST (Swedish) = Daphne merezeum. Swahn (p. 14) claims that the Romans used this as a spice, but since it is highly poisonous this seems unlikely (since he calls it "a most malodorous treat for the taste", he may have confused it with asafetida). I have not found any reference to it in my Roman sources. Comments, anyone?

TIL (India) = SESAME SEED.

TILEUIL see Linden Flowers (Period Potations).

Tilia cordata = Linden Flowers (Period Potations).

TJABÉ DJAWA (Indonesia) = Cubebs (Spices).

TOGARASHI (Japan) = CHILI POWDER.

TONKA BEAN = Dipteryx odorata. Seed of tropical South American tree, with strong sweet scent. Used for flavouring, like VANILLA.

TOUT ÉPICE (French) = Allspice (Spices).

TRASI (Indonesia) is a firm paste made of salted fermented shrimp or prawns, used widely in Southeast Asian cooking.

Trachyspermum copticum = Ajwain Seed (Spices)

TREACLE is, today, a thick semi-liquid sweet syrup, by-product of the refining of sugar. In ancient times "theriaca" (Latin) was a compound of drugs used as an antidote against poisons. In the Middle Ages "triacle" (Old French) was an electuary of drugs in syrup; in more recent times the name has been transferred to the syrup itself.

TRIGONELLA (Italian) = Fenugreek (Spices).

Trigonella foenum-graecum = Fenugreek (Spices).

Tritonea aurea = CAPE SAFFRON.

TURMERIC = Curcuma longa [we do not at present carry this].

TYMIANEK POSPOLITY (Polish) = THYME.
