Paeonia officinalis = PEONY.

PAK CHI MET (China) = Coriander Seed (Spices).

PAK KOK (Chinese) = Star Anise (Spices).

PALILLO (Peru) = ". . . less well-known Peruvian spice . . . which imparts a bright sunshine-yellow color to food." [ORTIZ 1992, p. 80]. TURMERIC can substitute for this.

PANCH PORON is a mix of whole spices (typically cumin seeds, fennel seeds, mustard seeds, nigella seeds, and fenugreek seeds) from the Bengal region of eastern India, used to flavour pulses and vegetable dishes.

Pennyroyal (Spices) = Mentha pulegium.

Piper nigrum = Black Pepper (Spices) is the dried ripe berry; White Pepper (Spices) is black pepper with the outer black skin removed; Green Pepper (Spices) is the dried immature berry.

PIPERIES (Greek) = SWEET PEPPERS.

PIPPALI (India) = Long Pepper (Spices).

PIRI-PIRI (Portuguese) = small red very hot CHILIS not more than ¾" long.

PISI HUI (Thailand) = CAYENNE/CHILI POWDER.

POIVRE (French) = PEPPER in general, usually Black Pepper (Spices).

POIVRE D'ÂNE (French-Provençal) = a variety of wild SAVORY.

POIVRE DE GUINÉE (French) = GUINEA PEPPER or CHILI.

POIVRE DE LA JAMAÏQUE (French) = Allspice (Spices).

POIVRE DE MIGNONETTE (French) = MIGNONETTE PEPPER.

POIVRE GRIS (French) is finely ground MIGNONETTE PEPPER (that is, a mix of equal parts of black and white pepper).

POIVRON (French) = small hot CHILIS.

POMEGRANATE SEED = Punica granatum. [we do not at present carry this].

PONTEFRACT CAKES are lozenges of licorice stamped with the impression of Pontefract Castle in Yorkshire, England, where licorice has been grown since the time of Elizabeth I.

POPPY SEED = Papaver somniferum. The seed comes in shades from white to brown to blue-grey. [we do not at present carry this].

POT MARIGOLD = Calendula (Pot Marigold) (Spices).

POY KAK BUA (Thailand) = Star Anise (Spices).

PREZZEMOLO (Italian) = PARSLEY.

Prunus mahaleb = Mahlab (Spices).
