MIGNONETTE PEPPER, widely used in France, is a mixture of equal parts of black and white peppercorns, crushed or coarsely ground.

MINT. The variety of mint commonly used in earlier times was Spearmint (Spices). The earliest record of PEPPERMINT was in 1696. Other varieties of mint are APPLE MINT and HORSE MINT.

MYRTLE = Myrtus communis. Both aromatic leaves and berries of this evergreen shrub were used in ancient Roman cookery. Myrtle Leaf (Spices) may be used in place of BAY LEAVES.
