GALINGALE = Greater or Java Galingale (Spices) or Lesser Galingale (Spices). In post-medieval English sources, it may sometimes mean the root of Cyperus longus (this edible root is pinkish and has a smell of roses when cooked).

GANDHMUL (India) = Zedoary (Spices).
GARAM MASALA is the basic spice blend of northern India. Like curry powder, there are many varieties, running from aromatic to very hot. The milder masalas, without chilies, are little changed from the flavourings used in India before the introduction of the chili pepper from American in the later part of the sixteenth century.
GARDEN SAVORY = SUMMER SAVORY.
GARLIC = Allium sativum.
GARLIC MUSTARD = Alliaria petiolata. A common pot herb which grows wild in England. Known locally there as SAUCE ALONE.
GARUM (ancient Rome) was a salty fermented fish sauce. Fish Sauce (Spices) is a reasonable although not exact substitute.
GELBWURZ (German) = TURMERIC.
GENÉVRIER (French) = Juniper Berries (Spices).
GENIÈVRE (French) = JUNIPER, generally Juniper Berries (Spices).
GEWÜRZNELKENBAUM (German) = Cloves (Spices).
GEWÜRZPAPRIKA (German) = CHILI of the Capsicum annuuum family.
GINEPRO (Italian) = Juniper Berries (Spices).
GINGEMBRE (French) = Ginger (Spices).
Ginger (Spices) = Zingiber officinale.
GINGIBER (ancient Rome) = Ginger (Spices).
GITH = Nigella Seed (Spices).
GITTO = Nigella Seed (Spices).
Glycyrrhiza glabra = Licorice Root (Comfits and Sweets).
GOLDEN NEEDLES (China) = bitter dried buds of the tiger lily.
GORCZYCA, CZARNA (Polish) = Mustard (Black) (Spices).
GOZDZIKI (Polish) = Cloves (Spices).
Grains of Paradise (Spices) = Aframomum melegueta
GRAWN PARIS (13th Century Wales) = Grains of Paradise (Spices).
GREATER INDIAN CARDAMOM = Cardamon, Black (Spices)
Greater or Java Galingale (Spices) = Languas galanga.
GRECIAN LAUREL = Bay Leaf (Spices).
GREEK HAY = Fenugreek (Spices).
GREEK OREGANO = OREGANO, GREEK.
GREEN CARDAMOMS = Cardamom, Green (Spices).
Green Pepper (Spices) = the dried immature berry of Piper nigrum, which also produces Black and White Pepper.
GRÖNMYNTA (Swedish) = Spearmint (Spices).
GRÜNE MINZE (German) = Spearmint (Spices).
GUASCAS (Colombia) = Galinsoga parviflora, a marigold-like herb used in Colombia (and possibly other adjacent countries), especially in "Ajiaco", the chicken and potato soup of Bogota. Elsewhere an introduced weed. (We do not at present carry this)
GUINDILLA (Spanish) = CHILI.
GUINEA GRAINS = Grains of Paradise (Spices).
GUINEA PEPPER = may mean 1] Grains of Paradise (Spices); 2] ETHIOPIAN PEPPER; 3] a variety of small hot CHILI.
Gum Benzoin (Sweet Scents) = Styrax benzoin.
GUM, STINKING = Asafetida (Spices).
GUM, SWEET = SWEET GUM.
GUMBO FILÉ = FILÉ POWDER.
GURKENKRAUT (German) = Dill Seed (Spices).
