CALAMINT = Calamintha officinalis. This herb has a warm peppery smell, similar to peppermint. [we do not at present carry this].

CAMPHOR = white camphor crystals extracted from the wood of Cinnamomun camphora. This was sometimes used to scent foods. [we do not at present carry this].

CANEL, FLOUR OF (med. England) = Cassia Buds (Spices).

CANELA (Spanish) = Cinnamon (Ceylon) (Spices).

CANELA DE LA CHINA (Spanish) = Cinnamon (Ceylon) (Spices).

CANELLA (medieval Italian, literally "little tube") = Cinnamon (Ceylon) (Spices).

CANELLA = Canella alba. A digestive, aromatic condiment is made from the inner peel of this West Indian tree. Also known as WILD CINNAMON. [we do not at present carry this].

CANELLA (Italian) = Cinnamon (Ceylon) (Spices).

CANELLE (England, 15th Century) = Cinnamon (Cassia) (Spices).

CANNELLE (French) = Cinnamon (Ceylon) (Spices).

CANNELLE DE CHINE (French) = Cinnamon (Cassia) (Spices).

CANNELLE DE COCHINCHINE (French) = Cinnamon (Cassia) (Spices).

CAPE SAFFRON = either of two South African plants, Lyperia crocea or Tritonea aurea, whose dried flowers look and smell rather like true saffron.

CAPERS = pickled flower buds of Capparis spinosa. [we do not at present carry this].

CAPPARES (ancient Rome) = CAPERS.

Capparis spinosa = CAPERS.

CAPSICUM = a generic term for the various "peppers" of New World origin, diverse varieties of Capsicum annuum and Capsicum frutescens.

Capsicum annuum = species of CAPSICUM, including most sweet peppers and some hot varieties.

Capsicum frutescens = species of CAPSICUM, including most of the small, pungent forms.

Caraway Seed (Spices) = Carum carvi. This is sometimes confused with CUMIN. In Oriental cookery books, when the recipes calls for CARAWAY, it is usually CUMIN which is intended.

CARDAMON = used alone usually means Cardamon, Green (Spices).

Cardamon, Black (Brown) (Spices) = Amomum subulatum. The pods are larger than regular Cardamom pods, dark brown or black in colour.

Cardamom, Green (Spices) = Elettaria cardamomum. Green Cardamoms are the whole unbleached pods; White Cardamoms are simply the same pods bleached. There is not difference in taste.

CARDAMOM, KORARIMA = Aframomum korarima. A distinctive variety from Ethiopia. [we do not at present carry this].

CARDAMOM, ROUND CHINESE = Amomum globosum. Dark brown, rather hairy, these are sometimes used as substitutes for regular Cardamom. [we do not at present carry this].

CARDAMOM, WHITE = see comment at Cardamom, Green (Spices).

CARDAMOM, WILD (med. Europe) = Cardamon, Black (Spices)

CARDAMOME (French) = Cardamom, Green (Spices).

CARDAMOMO (Italian, Spanish) = Cardamom, Green (Spices).

CARDAMOMUM (ancient Rome) = Cardamom, Green (Spices).

CARDAMON (German) = Cardamon, Green (Spices).

CAREUM (ancient Rome) = Caraway Seed (Spices).

CAROB = Ceratinia siliqua. [we do not at present carry this].

CAROM (India) = Ajwain Seed (Spices)

CARRAGEEN = Chondrus crispus. A green or purplish mucilaginous edible seaweed. [we do not at present carry this].

Carthamus tinctorius = SAFFLOWER.

Carum carvi = Caraway Seed (Spices).

CARVI (French) = Caraway Seed (Spices).

CASSIA = Cinnamon (Cassia)(Spices). In North America, most of what is sold as "cinnamom" is Cinnamomum cassia, while in Europe "cinnamon" generally means Cinnamomum vera.

Cassia Buds (Spices) = Cinnamomum aromaticum. Dried flower buds of the cassia cinnamon tree.

CATMINT = Nepeta cataria. A herb with strongly aromatic leaves. [we do not at present carry this].

CATNIP = CATMINT.

CAYENNAPFEFFER (German) = CAYENNE.

CAYENNE = A very finely ground powder made of a blend of CHILIES, usually of the Capsicum frutescens family.

Celery Seed (Spices) = Apium graveolens.

ÇEMEN is a mixture of ground fenugreek, red pepper, and garlic, used as a meat coating in Turkey and Armenia.

Ceratonia siliqua = CAROB.

Ceylon Cinnamon (Spices) = Cinnamomum vera.

CEYLON-ZIMT (German) = Cinnamon (Ceylon) (Spices).

Chamaenerion angustifolium = FIREWEED.

CHARNUSKA = Nigella Seed (Spices)

CHEE MA (Chinese) = SESAME SEED.

Chenopodium ambrosioides = Epazote (Spices).

CHESNOK (Russian) = GARLIC.

CHILI POWDER = A powder of ground dried CHILIES; may vary from mild to quite powerful.

CHILIES = various forms of CAPSICUMS.

CHINESE ANISE = Star Anise (Spices).

CHINESE CINNAMON = Cinnamon (Cassia) (Spices).

CHINESE FIVE-SPICE POWDER is a blend of star anise, Szechuan pepper (fagara), cassia, cloves, and fennel seeds. It may also sometimes include cardamom, dried ginger, or licorice root.

CHINESE PARSLEY = Cilantro (Spices).

CHINESE PEPPER = Szechuan Pepper (Spices).
